- I%1/4, tsp, salt

- I%1/2, lb, macaroni

- R% Saute the onion in the olive oil until browned.
- R% Add the ricotta cheese, tomato paste, tomato puree, and water.
- R% Mix thoroughly.
- R% Add the salt and pepper and cook over a low heat for about 1 hour.
- R% Stir occasionally.
- R% Cook macaroni in boiling salted water until tender (approx.
- R% 10-12 minutes).
- R% Drain well and put in a 2 quart serving bowl.
- R% Pour sauce over the macaroni and sprinkle with the cheese.
